OUR WINES

All our wines are vinified and aged in our cellar including our sparkling wine, Crémant de Bourgogne:
Wine can be vinified in stainless steel or enamel vats: neutral taste, easy to clean, cost saving.
Wine can be vinified in oak barrels: those provide more aromas, softness but they require more maintenance and are more expensive.

Our BURGUNDY WHITES: Grape variety “Chardonnay”.

Our cuvée CHARDONNEUSE DORÉE is vinified in stainless steel vats. Dry, fruity, 6 years of bottle age, this white Burgundy with 12,5% alcohol goes very well with charcuterie, fish, shellfish, white meat, goat and sheep cheese and biscuits, just like a Chablis.

Our HAUTES CÔTES DE NUITS wines are vinified in stainless steel vats. Dry, fruity, elegant, slightly smooth and generous, 6 to 10 years of bottle ageing, full-body with 14,5% alcohol. You can enjoy them as a aperitif or with some charcuterie, fish, shell-fish, white meat, goat and sheep cheese.

Our CHABLIS wines are vinified in stainless steel vats. Dry, fruity, 6 to 10 years of bottle ageing, 12,5% alcohol. They are nice with some charcuterie, fish, shell-fish, white meat, cheese (goat, sheep, mountain) and biscuits.

Our CHABLIS "ETOILE DU GLOBE" (meaning literally “The Globe’s Star”) are vinified in oak barrels to get tastes and flavors of the olden days when stainless steel vats did not exist. 12,5% alcohol. Oak barrels are mainly used for the vinification of our Grand Crus. They have a longer, smoother and deeper finish.

Our CHABLIS PREMIER CRU "Fourchaume" wines are one the most famous Premier Crus located in the extension of the Grand Crus plots. Same wine and food pairing as the Chablis. 13,5% alcohol, a little bit more than a Chablis, they are also lightly more full-body and the bottle ageing is from 6 to 10 years according to the vintage.

Our CHABLIS GRAND CRU "Vaudésir" wines are one the most famous Grand Crus. Same wine and food pairing as the Chablis. The alcohol content is 13,5% which is 5% more than the alcohol content of a Chablis Premier Cru, it is also more powerful, and the bottle ageing is 8 to 12 years according to the vintage.

Our BURGUNDY REDS and ROSÉ: Grape variety “Pinot Noir”.

Our CHARDONNEUSE ROSE wines are vinified in stainless steel vats. Very fruity, smooth, 3 to 5 years of bottle ageing, full-body, the qualities of this rosé are stunning. You can enjoy it with some pizza, grill meat, fish or you can simply enjoy it as an aperitif.

Our HAUTES CÔTES DE NUITS wines are vinified in stainless steel vats. Soft, fruity with small red berries aromas (strawberry), 3 to 8 years of bottle ageing, full-body, 13,2% alcohol. You can enjoy it lightly fresh with some charcuterie, red meat and cheese.

Our CHARDONNEUSE RED wines are vinified in stainless steel vats. Soft, light and fruity, with 3 to 5 years of bottle ageing, you can enjoy them fresh with some fish, charcuterie, red meat, wild meat, fresh or light cheese and chocolate desserts.

Our CHARDONNEUSE WINES IN OAK BARRELS are an assemblage of wine vinified in stainless steel vats and wine vinified in oak barrel. Thanks to the oak barrels, there is more volume.

Our sparkling wine CRÉMANT DE BOURGOGNE : 80% Pinot Noir and 20% Chardonnay.

Our CHARDONNEUSE EN FÊTE wines are vinified in stainless steel vats and is elaborated with traditional method, riddling on wooden panel and disgorged in our cellar. The assembly of our two grape varieties offers more softness, aromas and finesse. You can enjoy our Crémant wines as much as Champaigns.

Our APERITIF

Our RATAFIA DE BOURGOGNE are elaborated in stainless steel vats. They are made of two-thirds of grape must and one third of Marc de Bourgogne. The Rafatia is mostly served cool as an aperitif ,17% ABV. It is also very nice with pan-fried foie gras, fruit salads and desserts.

Our DIGESTIVE

Our MARC DE BOURGOGNE obtained from the distillation of our Marc of Pinot Not are aged in oak barrels during several years, 45% alcohol. It has great digestive virtues.
